What: Food has long been recognized as both an art and a science. Too much, too little, healthy, not healthy – food and the food system have long reflected our knowledge, capacity, wealth, and wisdom. This MIT Enterprise Forum features notable thought leaders who are shaping the future of food.

Today, our food supply is at the intersection of technology, culture, nutrition, sustainability and economics both locally and globally, and begging curious questions. Why is high obesity tied to low incomes in America? Can’t global hunger be solved with the productive capacity we have for agriculture today? Are increasing food allergies, gluten intolerance, and lactose sensitivity indicative of our food system or our lifestyles? What are some of the current food trends driven, in part by consumers, and how are they linked to issues around sustainability? How is technology facilitating a more sustainable food culture? We can’t escape the influence of food and the food system on our daily lives wherever we live.

Hear the latest from an inventive wheat breeder, the break-through concepts of the modernist cuisine, how the food system is being developed globally as well as locally among cutting edge restaurants.  Discover what you do, and do not know, about food and its influence on our daily lives.

Who:  Speakers include:

One of the country’s most acclaimed chefs, Renee Erickson is a James-Beard nominated chef and the owner of several Seattle restaurants: The Whale Wins, Boat Street Café, The Walrus and the Carpenter, and Barnacle and two catering creatures, Narwhal and General Porpoise. Renee Erickson owned her first restaurant at age twenty-five. Her recipes have been featured in The Wall Street Journal, Bon Appétit, and Food & Wine. In 2013, The Walrus and the Carpenter was named on Bon Appétit Magazine’s list of the “20 Most Important Restaurants.” She published her first cookbook, “A Boat, A Whale & A Walrus” in Sept. 2014.
